Salad with Apples and Cheddar

Ingredients
- Reserved chicken from Tangy BBQ Chicken recipe
- 3 tbsp. olive oil
- 2 tbsp. cider vinegar
- 2 tsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1 head red leaf lettuce
- 1 small red pepper
- 1 Granny Smith apple
- 1/4 c. chopped walnuts
- 2 oz. extra-sharp Cheddar cheese
Directions
- Step 1Remove and discard bones from reserved chicken; shred meat. In large bowl, whisk olive oil, cider vinegar, Dijon mustard, salt, and pepper.
- Step 2Add to same bowl: lettuce and red pepper; toss until well combined.
- Step 3Divide among 4 serving plates; top with apple slices, chicken, walnuts, and Cheddar cheese.
